SPOTLIGHT CHEF
Our SpotLight Chef of the Month is LIZZIE FROM VERMONT! Lizzie loves to cook for her family. She really enjoys making hot chocolate with all the extras, like including marshmallows, whipped cream and a cherry on top! She loves to help use the family’s “Magic Bullet” mixer and gives us a recipe for a quick chocolate pudding below!

Ice Cream Fandango Cake
Ingredients: 24 Ice Cream Sandwich Bars 2 containers Cool Whip 2 Hershey’s Chocolate Bars 12 Oreo Cookies 1 Bag M&M’s (small) 4 Tablespoons Hot Fudge Topping 4 Tablespoons Carmel Topping
Prep: Crush Candy Bars, Oreos, M&M’s and put aside.
Use a glass baking dish, 9x12, and spread a layer of Cool Whip on the bottom, then add a layer of ice cream sandwich bars, another layer of Cool Whip, then bars, then sprinkle crushed mixture on top. Drizzle the hot fudge and carmel toppings over it. Freeze for 3 or more hours.

FRUITY POPSICLE CUPS
Ingredients: 1 6-8oz can of frozen fruit juice concentrate like fruitpunch, pink lemonade.. 3-4 cups cut up peachs, honeydew or cantelope 1/2 cup water 12 paper cups 12 popsicle sticks
Put fruit juice concentrate, fruit and water in blender. Using a grown up for help, blend for 2-4 minutes. Pour into cups, put stick in the cup and freeze for 3-4 hours or overnight. To eat, peel the cup off and enjoy!

WATERMELON WONDER PIE
Ingredients: 4-5 cups crumbled short bread cookies 4-5 cups cut up seedless watermelon cut up small, choppy pieces 1 can whipped cream topping
Using a pie dish, clear or decorative, put a layer of crumbled short bread cookies on the bottom. Spoon the watermelon on top. Cover with the rest of the short bread cookie crumbles. Use whipped cream on top to decorate. Put a few cookie crumbles and a few pieces of watermelon in the center for decoration. Refreshing and yummy as can be!

Nicole’s Heart Healthy Cinnamon Pancakes
Ingredients: 2 cups Heart Smart Bisquick pancake mix 2 egg whites 1 ½ cup of fat free skim milk or enriched soy milk ¾ tablespoon of cinnamon
This is lots of fun to make with a grown up! Kids do the mixing, adults do the cooking. Whip it up until smooth and creamy. If you think it’s too thick then add a little more milk. If it’s too thin add more pancake mix. Preheat cooking griddle at medium for about 5 to 10 minutes Pour pancake mix onto griddle. Flip when you see bubbles. Then wait for 30 seconds to one minute and take off griddle or until pancake is golden brown.
When finished the pancakes can be served with healthy heart butter (soy butter) and syrup or you can serve with a variety of sliced fruits such as pineapple, strawberries, bananas, blue berries or raspberries.

RITZY SQUARES
Ingredients: 36 RITZ Crackers, crush them up 1 cup Marshmallow Creme 1 cup crunchy peanut butter 1/2 cup miniature semi-sweet chocolate chips 1 ounce chocolate, melted
Mix marshmallow creme, peanut butter in a large bowl until really creamy. Add crushed cracker crumbs and chocolate chips and blend it all together..
Lightly press the cracker crumb mix into a greased (with butter) 9-inch square pan, drizzle the melted chocolate on top. Leave at room temp for approximately 30 minutes. Cut into squares and eat. Delicious!

Lizzie’s Quick Mix Chocolate Pudding (using the “Magic Bullet”)
Ingredients: Heavy whipping cream - chilled Chocolate Powder (for chocolate milk)
Pour heavy cream into Magic Bullet, about 3/4 of the cup container full. Add 4-5 tablespoons of chocolate milk powder. Seal container and blend for about 8 seconds. Quick, easy and great! You can use strawberry powder instead and have a strawberry pudding.
